Nikolaos Valet is the Director of Process R&D at Mondelez International, based in Greece. He holds a degree in Chemical Engineering from the National Technical University of Athens. Nikolaos began his career in the Edible Oils & Fats industry, working for Minerva S.A. as a Process Engineer and later as an R&D Manager. His early experience in this sector provided a strong foundation in food processing and quality control.
In 2006, Nikolaos transitioned to the Bakery & Confectionery industry by joining Chipita S.A. He played a significant role in R&D, contributing to the development of new products and processes. Following the acquisition of Chipita by Mondelez, Nikolaos was appointed as the R&D Director for Soft Cakes & Pastries. In this role, he leads process engineering and manages the Mondelez R&D Technology Center in Greece.
Nikolaos specializes in hygienic food processing, which has substantially improved food safety and consumer trust in processed foods. His work includes advancements in sanitary design, GMP rules, and the early identification of food-related risks. Despite these improvements, he acknowledges the ongoing challenges of environmental contamination of food through air, particularly in certain food categories.
Nikolaos’ current research focuses on the potential capabilities arising in food formulation and commercialization of packaged food, addressing environmental contamination through air. His presentation will explore the latest developments in cleanroom technology for food processing, highlighting the importance of maintaining a controlled environment to ensure food safety and quality.

His contributions have had a significant impact on the industry, improving both product quality and operational efficiency. He continues to drive advancements in food safety and contamination control, ensuring that Mondelez remains at the forefront of the food processing industry.
